Rio Negro Farm is an experimental coffee farm in Colombia, known for producing distinctive, fruity microlots. The project is managed by producers from the Café de la Torre initiative, who specialize in controlled fermentations that emphasize the natural fruitiness of the beans.

This lot comes from the Pink Bourbon variety, prized for its intense aroma, clean taste, and natural sweetness. Combined with experimental processing, this results in a very lively and complex sensory profile.

The fermentation process is strictly controlled, which promotes the creation of aromatic compounds and brings out the full fruity character of the coffee. The result is a cup full of stone fruits and tropical fruits, with a delicate caramel sweetness and elegant acidity.

The taste is dominated by notes of peach and apricot, complemented by sweet accents of guava and red berries. The whole is rounded off by a subtle caramel sweetness and a long, juicy finish. The body is smooth and juicy, the acidity is citrus-grape-like, and the aftertaste is fruity-sweet and clean.
