Diego Bedoya is the producer behind the experimental coffee COLOMBIA RON MANDARINA, which comes from the farm La Chiquita in the Caldas region. This unique batch was created thanks to an innovative approach to processing, which combines controlled fermentation with the addition of mandarin and subsequent aging of the beans in rum barrels. The result is an exceptionally distinctive and unconventional flavor profile.
The coffee was prepared from the Tabí variety, valued for its elegance, clean taste, and complex character. The combination of this variety with the experimental processing method yields a cup full of citrus freshness, natural sweetness, and subtle hints of rum and wood.
In terms of taste, mandarin clearly comes to the fore, its juiciness harmoniously combining with the sweetness of rum and a delicate note of dark chocolate. The profile is sweet, citrusy, and slightly spicy, with a long, intensely aromatic finish.

The body is juicy and full, the acidity is medium, citrusy, and the aftertaste remains sweet, rummy, and mandarin-like for a long time.
