Concept Coffee Roasters Colombia Strawberry Cheesecake is a blend of classic Brazil and strawberry co-fermented Colombia, roasted darker, for espresso.


It begins with a bright, juicy strawberry sweetness that smoothly transitions into a velvety heart full of rich vanilla and creamy smoothness. The whole is crowned with a long-lasting, decadent chocolate finish.

Blend

60% Strawberry Colombia – El Vergel
The process begins with manual sorting, where only ripe fruits are selected, and any impurities, such as leaves or stones, are removed. The cherries undergo 24 hours of pre-fermentation in plastic bags, followed by 24 hours of whole cherry fermentation. After depulping, the beans are subjected to 5-day anaerobic co-fermentation with mucilage, with added yeast and strawberries, which enriches the honey process profile with intense, fruity notes. Finally, the coffee is mechanically dried for 10 days to ensure uniform moisture levels, and then stabilized for 5 days in GrainPro bags.

The result is a vibrant, distinct cup with notes of strawberry, milk chocolate, and malic acid, highlighting the diversity of Colombia's terroir and innovative approach to coffee processing.

40% Natural Brazil – selective mechanical harvesting
Harvesting usually takes place when the tree has 40–60% ripe fruit, 5% green, 10% unripe, and the rest dried. Each batch of coffee has unique characteristics, so before ordering a specific batch, a sample is taken, processed, and roasted to verify the expected flavor. Sorting is done in a specially modified wet mill – first by density, removing excess waste, and then dry and natural beans are separated into ripe, unripe, and green.
