The Villa Pastora farm was established in the 1980s by Pastora Anacona and is located in the town of Palestina in the Huila region of Colombia – one of the country's most highly regarded coffee growing areas. From its very beginning, Villa Pastora has been a family enterprise. Successive generations of producers have jointly developed the farm, passing on knowledge, experience, and a passion for creating exceptional coffee.

Currently, the farm is managed by Yulieth Mora, who has played a key role in transforming Villa Pastora from a family plantation into a local community hub. Thanks to her commitment, the farm supports residents by creating jobs, providing advice on post-harvest techniques, and assisting neighboring producers who do not have their own infrastructure for processing coffee. Since its inception, Villa Pastora has based its production on sustainable farming methods, constantly focusing on quality.

This lot of the Ombligon variety – rare and valued for its characteristic "navel-like" shape and exceptionally expressive flavor profile – was processed using a strain of Saccharomyces cerevisiae yeast, which allowed for extended fermentation in the presence of mucilage (the natural pulp layer surrounding the bean). After fermentation, the cherries were dried on a patio for 15 days.

We are delighted to present the first Ombligon variety coffee in our offering – a cup with a long, sweet finish featuring notes of apricot, a delicate floral character reminiscent of chamomile, and the juicy freshness of pink grapefruit.
