Like all Shokunin coffees, this is an Omniroast, though we brew everything from them as filter coffee.
Espana is a coffee that combines the simple joy of discovery with the exceptional quality of Central American beans. This lot comes from El Salvador, specifically from the Canton Quezalapa in Apaneca region, where beans of the Castillo and Bourbon varieties have undergone anaerobic natural processing. This process helps to bring out intense fruity sweetness and complex aromas, while maintaining a pleasant balance in the cup.
In terms of flavor, Espana offers distinct notes of fresh orange, transitioning into the juicy sweetness of berries and blueberries, complemented by a smooth, caramel body. The profile is fruity, yet not overpowering—the sweetness remains clean and natural, making for a very approachable and harmonious experience.
Thanks to the anaerobic natural fermentation, the coffee is characterized by a full, juicy character, which is particularly well revealed in pour-over methods such as pour-over, Chemex, or Aeropress. At the same time, its structure and sweetness also make it an excellent choice for espresso, offering a soft, pleasant finish.
