Colombia Argote Lactic Anaerobic from Dutch roaster Shokunin

Sometimes coffee growers don't even realize the quality of the coffee they produce. The Argote family discovered the world of specialty coffee just three years ago. Now, Juan Pablo is fully committed to this field, experimenting and looking for every opportunity to improve his coffee. In doing so, he also inspires the community around him, contributing to quality development throughout the Nariño region.

This approach inspired the roastery to collaborate with Juan Pablo and his father Efrain, who owns the central land and processing equipment. Close cooperation has already resulted in wonderful experiments and quality improvements. This led to such high demand that Shokunin is currently the exclusive roaster for Efrain and Juan Pablo's coffee. This translates into even more direct feedback, greater control, and more opportunities for innovation and premium quality.

After numerous fermentation courses and experiments, Juan Pablo began actively controlling the fermentation of his coffee.

Castillo variety beans undergoing a wild process - 8 days of anaerobic fermentation. This resulted in distinct nutmeg and jasmine aromas and a gentle sweetness of papaya and banana. The coffee has a delicate Darjeeling tea-like consistency.
