After numerous fermentation courses and experiments, Juan Pablo began actively controlling the fermentation of his coffee.
Castillo variety beans undergoing a wild process - 8 days of anaerobic fermentation. This resulted in distinct nutmeg and jasmine aromas and a gentle sweetness of papaya and banana. The coffee has a delicate Darjeeling tea-like consistency.
