Colombia Papayo Montanchez from the Dutch roastery Sprout Coffee Roasters.

Coffee cherries are harvested at peak ripeness every 21 days and left to ferment for 12 hours in a wooden hopper. Then they are depulped and left for dry fermentation in a tiled tank for another 48 hours, after which the mass is covered with water and left for wet fermentation for another 10 hours. The seeds are then washed of mucilage and transferred to solar dryers, where they are dried for 16-20 days.

This promising variety offers a fruity, floral, and herbal flavor profile. Blackcurrant and distinct pear stand out against a massive, complex floral background, tangerine, and rosemary.
