Like all Shokunin coffees, this is an Omniroast, although we brew everything from them in a filter.
Girma Sentayehu is a coffee from the heart of Yirgacheffe in Ethiopia — a region that for decades has been considered one of the most important places in the world for Arabica quality. The beans come from a small, family farm run by a producer of the same name, who, with his wife and son, continues the tradition of coffee cultivation, ensuring quality at every stage — from manual harvesting to careful washed processing.
In the cup, this coffee offers a clear and fresh sensory profile — dominated by floral notes, a delicate sweetness of fresh forest fruits such as berries or plums, and pleasant, subtle spice aromas. The whole has a light, transparent character and a soft body, making the brew elegant, easy to drink, and very pleasant both solo and in your daily coffee ritual.
The washed process means that the beans were thoroughly cleaned of pulp and fermented with water, which emphasizes their clear taste and distinct purity of aromas. This allows the coffee to retain a clear structure, intense acidity, and lightness, which pairs perfectly with pour-over methods.
Girma Sentayehu works great in alternative methods such as pour-over, Chemex, drip, or Aeropress, which highlight its fruity freshness and aromatic clarity. At the same time, it can be an interesting option as an espresso for those who prefer lighter, more transparent profiles in the cup.
