The cup profile is balanced and elegant – you'll find notes of forest fruits, dark chocolate, and melon, supported by a round sweetness and pleasant texture. It's a clear, easy-to-read coffee, yet with enough character not to be too conservative.
This batch shows that Diego Samuel Bermudez is not just about unconventional experiments, but also about “core,” refined coffees that respectfully approach the raw material and terroir of the Cauca region – simple in concept, clean in taste, and executed to an exceptionally high standard.
Colombia Castillo Bermudez comes from the Piendamó region in Cauca – a place known for its balanced climate and ideal conditions for clean and stable natural processing. This batch was produced at Finca El Paraiso under the direction of Diego Samuel Bermudez – a name often associated with intensely processed coffees and distinct, "funky" flavor profiles.
However, this coffee tells a completely different story.
This naturally processed Castillo demonstrates the foundation of Bermudez's philosophy: process control, repeatability, and clarity of flavor. It is a foundational coffee, consciously designed for balance and accessibility – without interventions meant to force or artificially build a flavor profile, but with enough precision to highlight the origin, natural fermentation, and varietal character.
Processing:
The process begins with flotation and disinfection of the coffee cherries, followed by controlled fermentation of submerged coffee cherries for 72 hours in a bio-fermenter. The goal of this stage is not to achieve an extreme character, but to develop a clean natural sweetness and a well-defined aromatic structure. Drying takes place slowly on parabolic beds, which helps maintain consistency and stability of the cup profile.
Coffee labeled for espresso, but it's a fairly light roast, can easily be used for filter.
