Colombia El Puente, Honey processed by Dutch roastery Sango

Flavour notes: Strawberries, Milk Chocolate, Cream

Finca El Mirador is a renowned family farm in the Huila region of Colombia, currently run by Elkin Guzman – a third-generation coffee producer. In 2018, the farm began collaborating with the exporter Clearpath Coffee, which places a strong emphasis on sustainability and promoting exceptional coffees from small producers and cooperatives on the global market. The joint project was named El Puente (“the bridge”).

As part of the El Puente project, a coffee washing station was established, along with drying and storage infrastructure. It also provided access to knowledge and modern processing methods, and connected local producers with the global market, ensuring fair compensation. The station is located in Palestina (Huila), a region with numerous small farms – today the project supports over 200 producers.

This particular lot underwent honey processing. First, the whole cherries were dried and fermented for 8 days, then transferred to water tanks for 36 hours. The rehydration process breaks down sugar molecules, increasing the coffee's sweetness. After this stage, the cherries were de-pulped, and the beans were dried on raised beds for 20–25 days.

The result is an exceptionally sweet coffee with delicate, strawberry-like acidity, a creamy, milk chocolate-like body, and a sweet, milky finish reminiscent of whipped cream.

W Sango wierzy się w japońską filozofię mottainai – szacunek do tego, co otrzymujemy od natury. Mitchell, utytułowany barista (wicemistrz Holandii w kategorii Brewers Cup!), osobiście dba o to, by proces palenia podkreślał ciężką pracę plantatorów, a nie ją przyćmiewał.
