The Coffee Quest is a coffee importer with European headquarters in Amsterdam. Los Patios is their first processing center, located in La Plata in the Huila region of Colombia. Under the leadership of Alexis Silva (Quality Analyst) and Alberto Gutierrez (Regional Coordinator), the R&D department launched Los Patios in 2022 to improve the quality of coffees from producers facing processing challenges and instability due to climate change and limited access to infrastructure.
Los Patios has a laboratory, a skilled team, and a drying patio. This allows The Coffee Quest to buy coffee cherries from local producers, support them in the processing, and introduce their coffees to the global market.
This lot – Solsticio – is the first coffee designed by the R&D team. It consists of Castillo and Caturra varieties, harvested by various producers from the La Plata region. The cherries undergo a three-stage fermentation. First, aerobic fermentation takes place for at least 12 hours on the farms. Then the cherries are depulped and transported to Los Patios.
In the second stage, mossto – a fruity fermentation solution – is prepared, which undergoes controlled fermentation outside the bean. In the final stage, mossto is added to the coffee: first, 5 hours of aerobic fermentation, followed by 12 hours of anaerobic fermentation.
After fermentation, the coffee is dried for 12–16 days under controlled conditions, with continuous stirring and rotation to ensure even drying. Once the target moisture content is reached, it is transferred to airtight GrainPro bags, where it stabilizes before further processing.
The result is a uniquely refined flavor profile: sweetness and juiciness of apricot, complex, grapefruit acidity, a herbaceous background, and a fresh, rosemary finish.
