Colombia La Luisa infused with strawberries from the Dutch roaster Sprout Coffee Roasters.

This coffee is back, and we love it for its more subtle approach to enhancing specific flavors through fruit fermentation.

Experience fresh wild strawberries with a complex sweetness reminiscent of honeycomb and caramel.

Finca La Luisa, located at an altitude of 1600–1800 meters above sea level, is dedicated to producing and processing high-quality coffee. Whether it's washed, natural, or using new fermentation techniques. 4 years ago, the owner, Juan Pablo Vélez, started a carbonic maceration project in stainless steel tanks with CO2 injection. Based on this experience, about 2 years ago, they developed a method of fermenting coffee with fruit juice. This allowed the farm to create very defined and consistent profiles. And also to expand the range of flavors. These processes are called the fruit honey process. Due to the long fermentation process, very complex aromas can be found in the cup.

Ripe coffee cherries are placed in a tank, and CO2 is flushed through to create an oxygen-free (anaerobic) environment. The cherries are fermented in this environment for 5 days (120 hours).

Then the cherries are removed and pulped, but the leached liquid from the fermentation is retained. The ground coffee is then fermented a second time with the leached liquid from the first fermentation, as well as fresh strawberry juice. This second fermentation lasts 3 days.

Finally, the coffee is dried on raised beds in a honey process until optimal moisture content is reached.
