Colombia La Milan Maypop from Dutch roaster Sprout Coffee Roasters.

The Cultured Washed process was developed by Café UBA after several years of trial and error. Freshly harvested coffee cherries are placed in a bag for 10-12 hours to achieve a rapid temperature increase. Bacteria present in this environment and on the cherries begin to break down carbohydrates into sugars, which further raises the temperature. The coffee is then cooled in a water tank at 8-10 °C, after which it is depulped. While this process is taking place, maypop, passion fruit, and curuba fruits are crushed and prepared for addition to a yeast and bacteria culture. The mixed coffee, prepared fruits, and activated starter cultures are placed in tanks for anaerobic fermentation for 6-8 days. The fermented coffee is then washed and sun-dried for 15-20 days to achieve ideal moisture content.

This quirky process has given this coffee a very juicy, almost sour IPA vibe with a hint of lime. Enjoy this coffee as it cools, as the flavors will develop even more.
