This exceptional specialty coffee from Colombia has undergone an innovative Honey Co-Fermented process, thanks to which you will find intense notes of juicy peach, sweet honey, and creamy milk chocolate in your cup.
The secret of this coffee lies in an extremely precise fermentation process. Ripe coffee cherries are placed in pressurized steel tanks, where a five-day fermentation begins after oxygen is removed. The cherries are then de-pulped, and the beans are re-fermented with the previously obtained coffee juice and selected peach fruits. The entire process concludes with slow drying, which preserves the richness of aromas and exceptional sweetness.
As a result, we get a cup full of juicy stone fruits, honey sweetness, and a velvety body. Despite the experimental processing, the coffee remains harmonious and pleasantly balanced, offering a long, sweet aftertaste.
Son of a Peach is excellent for both pour-over methods such as V60, Chemex, or AeroPress, and as an incredibly aromatic espresso. This coffee is for those looking for modern, fruity flavor profiles and fermentations that push the boundaries of modern specialty coffee.
