If you think you've seen it all in coffee processing, Rocket Flower from the Slovak roaster Spojka Roastery will quickly change your mind. This bean comes from the El Paseo farm in Colombia, where the production process resembles work in a NASA laboratory more than traditional agriculture.

Behind this profile is a rather complex protocol:
- Sea Salt Bath: After 36 hours of pre-fermentation, Caturra cherries undergo disinfection in a sea salt solution. This is a rare treatment aimed at perfectly cleaning the beans before the crucial stage.
- Enzymes and Steel: The coffee is transferred to steel tanks with pressure regulating valves. Special enzymes are added to them, whose task is to enhance specific, floral aromatic notes.
- 6 Days of Fermentation: For almost a week, the beans develop character in anaerobic conditions, after which they are slowly dried in silos at a temperature below 38 °C to avoid "overheating" the delicate aromas.
