Luxury whole bean coffee stands out primarily due to the quality of the beans, their processing, and origin. It's a product with a clearly defined "from seed to cup" journey. Beans are sourced from trusted cooperatives or directly from producers, and each batch undergoes rigorous sensory evaluation (cupping).
In our store, you'll find only coffees that meet specialty standards (a minimum of 80 points on the SCA scale). These are freshly roasted coffees from artisan roasters, packed immediately after roasting, and ready to be enjoyed using pour-over methods or as espresso.
Specialty coffee refers to the highest quality beans, grown at altitudes conducive to the slow ripening of coffee cherries. Harvesting is done manually and selectively, and processing occurs under controlled conditions. The difference between regular and specialty coffee is immediately noticeable – in specialty coffee, the taste isn't just "bitter" or "coffee-like," but can evoke ripe fruits, flowers, honey, spices, and even peaches and rum. Importantly, the best premium whole bean coffee doesn't need added milk or sugar – its natural sweetness and complexity are enough to make the cup complete.
The whole bean coffee you'll find in our store has undergone various processing methods, each yielding different flavor profiles:
Washed – A classic, clean method where the bean is separated from the pulp, and fermentation is controlled. The result: a clear, balanced profile, perfect for V60 or Kalita.
Natural (Dry) – Whole fruits are dried in the sun. Thanks to contact with the pulp, the beans acquire fruity, fermented notes. Excellent for AeroPress or French Press.
Anaerobic – Fermentation occurs in sealed tanks without oxygen. The taste: dense, intense, often tropical.
Carbonic maceration – Inspired by wine, fermentation with controlled pressure and CO2. It yields aromas reminiscent of red fruits and preserves. Suitable for espresso and pour-over.
Thermal shock – A method often used by the Bermudez family from Finca El Paraiso. It involves fermentation with temperature control and a sudden drop in temperature. The coffee gains incredible sweetness and clarity.
Culturing – Julio Andres Quiceno's proprietary process, where beans are fermented with selected yeast cultures and fruits. This is the most complex process in our offering, generating aromas of ripe fruits, flowers, and spices. Ideal for tasting without additions, e.g., in a Chemex.
Each of these methods influences the coffee's body, acidity, and aromatic intensity. Choose them according to your favorite brewing methods and mood.
